Smoking by definition is a process by which meat is cooked by a low smoky fire. To do this properly the temperature must remain between 210 to 235 degrees constantly. The low temperature means a very long cooking process and sometimes it can take up to 50 minutes to an hour per pound for pork or beef to cook because they are thicker cuts of meat.
The most amazing part of this process is the Smoke. The wood that is used must be resin free and hard. We prefer to use 100% hickory but I am also partial to a mix of hickory and apple with some cuts to add a slight change in flavor.
The nitrates in the smoke enhance the flavor and start a reaction that makes the meat tender by breaking down the tissue. This process also breaks down collagen that turns into sugars and gives the meat a natural sweet taste. We also help this whole process with a slather, rub and a mop/injection in order to enhance the flavor even further and to make it unique to Blue’ Smoke BBQ. The flavor is in the meat not in the sauce. If done correctly you don’t need much sauce but if you decide to use some we some also have great sauces made in house.
